During longer trips, you sometimes develop cravings for certain foods. For some it is chocolate, for me it is the desire for bell peppers and tomatoes. With the following dish, I have focused on easily obtainable ingredients. The ingredients can be bought at a market or greengrocer.
Ingredients
The following ingredients are enough for one portion, which can be prepared in a small cooking vessel.
100 ml water
1 small onion
1 clove of garlic
1 small bell pepper
2 vine tomatoes
1 carrot
Herbes de Provence
Salt
Pepper
some oil
Optional Sides
Since the stew in this quantity is not enough for complete satiety, there are sides to go with it as desired.
Some suggestions:
Baguette - does not even need to be cooked, the UL favorite
Rice - you can basically eat it with anything
Pasta - also well suited.
Potatoes - should also go well in terms of taste
Required Utensils
The following items represent the minimum required for cooking. For preparation, my small cooking set is sufficient, for example.
400 ml cooking vessel
If necessary, a vessel for the prepared sides
Preparation
First, the side dish should be prepared.
With pasta, there is little to consider. Simply cook.
Prepare rice as described below.
With baguette, nothing needs to be prepared ;)
For the main meal, the various vegetables need to be chopped.
Cooking
First, fry the onions in oil. Now reduce the flame and let the dish simmer on a low flame. Then add the tomatoes, bell pepper and carrot.
Once the various vegetables have cooked down, season with the spices. This takes a good 30 minutes.

Tips
You can play around with additional ingredients here. Zucchini and eggplant work great for this dish. At that point, however, a larger cooking vessel will be needed.
