Skillet Vegetables with Rice

The dish “Skillet Vegetables with Rice” is part of the Supermarket Kitchen series. This series is about tasty meals with fresh ingredients that can easily be prepared on a stove. Since the fresh ingredients are not only very heavy but also perishable, they should be eaten as soon as possible after purchase.  

Ingredients

For this dish, the following ingredients are needed per person.

  • 1 pointed pepper

  • 1 tomato

  • 1 tsp vegetable stock

  • 1 1/2 tsp sweet paprika

  • 1/2 tsp Herbes de Provence

  • chili flakes

  • 1/2 cup basmati rice

  • 3/4 cup water

  • some salt

  • some pepper

Optional Additional Ingredients

  • 1 carrot

  • 3 tsp tomato powder

Required Utensils

  • Spoon

  • Cooking pot for the rice

  • Frying pan or additional pot for the vegetable stir-fry

  • Optionally a pot cozy for continued cooking

Advance Preparation

In principle, no advance preparation is necessary for this dish. However, it has proven useful to mix the spices beforehand in the correct proportions and take them in a freezer bag on the trip. This way, only one spice container is needed for the mixture.

Cooking Instructions

First, put the rice with a pinch of salt in a pot and cook it. Once the rice is done (about ten minutes), the chopped vegetables can go on the stove.

Use moderate heat here so the vegetables do not burn. After one to two minutes, add the spice mixture with some water and bring to a boil.

After another five to six minutes, the vegetable stir-fry is ready and can be served as sauce over the rice.

Tips

  • Salt and pepper are available in pre-portioned packages at two large burger chains in the self-service area.

  • Instead of fresh tomatoes, dried ones can be used. These are lighter and have a longer shelf life. Peppers and carrots are also available in freeze-dried form from mail-order retailers and are suitable for a pure freezer bag version of this dish.
